MUSHROOM BARLEY BURGERS
Fire up the grill! These vegetarian barley burgers are simple and easy to make. Serve in buns and top with salsa or wasabi stirred into mayonnaise, as well as lettuce, sliced tomatoes, and onions. You can also add a slice of cheese while browning the second side.
1 cup (250 mL) pot or pearl barley
3 cups (750 mL) water
2 Tbsp (30 mL) canola oil, divided
1 small onion, finely chopped
1 garlic clove, finely chopped
1 small carrot, finely chopped
½ lb (250 g) mushrooms, chopped
2 Tbsp (30 mL) chopped parsley
1 tsp (5 mL) grated lemon rind
1 tsp (5 mL) salt
½ tsp (2 mL) pepper
2 cups (500 mL) fresh breadcrumbs, divided
